Is a Part 107 needed to fly indoors for profit?
Assuming insurance is obtained, for liability and damages, could the FAA
file suit for services rendered?

Indoor flight is not within the National Airspace so no, you don't need a 107 for it. You DO need excellent piloting skills because most of the safety features that you rely on outdoors are not going to work indoors.
 
I flew toy drones inside many hours before attempting flying Phantoms indoors. After getting an Inspire 2, I don't think I would ever venture to do an indoor gig with it unless it were a cavernous type structure. Even using VPS.

Just don't get too close to the ceiling. Props will suck the drone into it.
