Having no experience with either my question is

Would either be able to detect an animal in tall grass (tall enough to block visual) from their body heat during the day ?

Depending on the sensor, as I’ve seen, it will not work if the ambient air (grass) and ground temp equals the temp of the surface of the animal. The larger the difference between the background and the body surface temp, the better it works.

Agreed. The difference between target and background, otherwise know at Delta-T is one of the biggest factors in successful data acquisition.
